I tasted Mentaiko Pasta for the very first time last year…and ever since then I have been hooked.  It is creamy, rich and goes down an absolute treat.  I like to nickname it the Japanese version of carbonora.

Essentially, mentaiko is marinated pollock roe.  Not that difficult to find in Singapore.  A quick trip to Meidiya and we were sorted.  The rest of the ingredients can easily be found in any supermarket – Japanese Mayo, toasted seaweed, fresh egg, flying fish roe, saba fish or prawns (optional).

It was such a hit with the family.  Awfully sinful, but definitely something we will be repeating again….the dish is done in less than half an hour!
