I love weekends.  It gives me time to tinker in the kitchen, and we get nice meals prepped for the following week.  I got my hands on some lovely oxtail over the weekend, and I was dying to use it.  Just cos Dad is away, so we can cook beef without having to worry what we can substitute for him.

I am quite tired of the usual oxtail stews with red wine added to it.  I wanted something rich and punchier, but without the red wine flavour.  Finally, decided to use my usual Vietnamese Lamb recipe, and just subbed the lamb with the oxtail.  And man was it an excellent choice.

10295692_10152352673273700_224048164326263674_nThe gravy was robust (thanks to all the yummy oxtail), and loved the tinge of mint and basil that was coming through at the end of each bite.

We started the meal with a fresh Kale salad.  It had grilled sticky and spicy chicken, creamy avocada and some stuff crab in it.  Dressed it all up with a tangy Raspberry vinaigrette, and it complemented our main beautifully.

Next thing to tackle…probably this coming weekend…hmm…maybe a guinness stew….or maybe a beef rendang?
